Bagels, made by hand in Spenard

Wooden Spoons Alaska is owned by Amy Nicolaisen. What started as catering work grew into a long stretch of bagel experimentation — batch after batch of dough, testing hydration, boil times and toppings until the crust and chew were right.

Anchorage has a long memory for good bagels, and equipment associated with the former Alaska Bagel operation helped bring these back to the city. Early bake days sold out fast, and the Nordic bagel — dill, garlic, onion and salt — quickly became the flavor people ask for by name.

Everything is made from scratch: dough mixed and shaped by hand, bagels boiled and baked each morning, cream cheeses whipped in house, and sandwiches built to order with wild Alaska salmon and local staples.

Note for launch: our catering materials reference a 2015 start for Wooden Spoons Alaska, while media coverage places the dedicated bagel operation in late 2023. The final copy will state both dates once Amy confirms the exact timeline.
